Nigel B

Nigel Burrows
Dip Env Health, NC Adult Education and Training, Dip Adv Hypnotherapy M.I.E.H.


After qualifying in the UK, Nigel moved to New Zealand to undertake a number of Environmental Health and Food Safety roles for Local and Central Government as well as private industry.

Nigel and his business partner, the late Mike Drinkwater, formed the award-winning Projected Images, Video by Courtenay and The New Zealand School of Food Hygiene in the late eighties.
NSF Burwater grew from this and continues to bring creativity and technical skill to the Food Industry. Nigel's extensive experience spans all aspects of food safety implementation, communication, live and media-based training and FSP design for manufacturing, retail and hospitality as well as compliance and internal audit. In 2013, Nigel accepted an invitation to the Food Processing Governance group.

Nigel is also a Clinical Hypnotherapist and an accomplished Improviser. 
As a keen foodie, Nigel relished the opportunity to meet Rick Stein and cook at the Seafood School in Padstow in 2010. He uses this as an excuse to go fishing whenever possible.

Tracey Burrows


Tracey has a long and successful history in sales, recruitment, finance, the food and wine industry as well as in real estate. 

Seeking a change from the corporate arena, Tracey joined husband Nigel and the NSF Burwater Team in an administrative and accounting role, typically bringing much more to the role than is required. She's been making a huge difference at all levels of customer interaction within the NSF Burwater Group. Tracey brings a strong customer focus to a job that supports the clients and crew at NSF Burwater.

In her spare time, Tracey loves walking their Griffons, Ted and Pipi, searching for fashion bargains, spending time with extended family and travelling in NZ and overseas.

South Island Consultant and Trainer

Chris joined NSF Burwater in 2006. He began his career in the British Army where he served in the Army Catering Corps. After a number of hands-on roles, he undertook the daunting task of being Catering Manager at Christ's College School in Christchurch. Chris is a huge advocate of Food Safety, both from a practical and theoretical perspective. He brings an unmatched level of experience to the group as well as our clients.

Based in Christchurch, Chris primarily looks after our South Island clients. His skills and experience are in food safety training, writing Food Safety Plans and maintaining Corporate FSPs. His forte includes auditing and assisting businesses to stay ahead when it comes to food safety issues.

Chris likes to keep busy in his spare time by playing golf, football and running. His favourite television programmes are anything food-based, especially with Jamie Oliver, Gordon Ramsay and Rick Stein. Chris has, and will try anything food-wise, but prefers not to eat food that lives at the bottom of the ocean.

Food Complaints Specialist

Peter first became involved with NSF Burwater in 2009, providing advice and investigations following up on customers' complaints.

He trained and initially plied his trade as an Environmental Health Officer in Birmingham, England. He escaped the big smoke to work initially in Hutt county and then Gisborne city, 20 years managing the Council Environmental Health division.

He and his wife moved to New Zealand the day after their wedding so they felt they were still on honeymoon!

Peter has been actively involved in helping to change the culture and behaviours, both within organisations and amongst the general public, by spending many years spearheading waste minimisation change before it became in vogue, and leading a change to a more inclusive, positive culture at his workplace.

When not helping people to be food-safe, Peter enjoys MC-ing, leading church services, improvisation, murder mystery evenings and all things performance and humorous. On a sunny day, you might find him sneaking to the beach for a quick soft serve yoghurt or at the museum café deck for a cappuccino. He might even shout you one if you’re ever in his neck of the woods.


Stephanie Carbone
MA Social Science (University of Newcastle), BA Agriculture (Ohio State University)

Food Safety & Quality Audit Manager

Stephanie has worked in New Zealand, Australia and the United States food industries with over 10 years of auditing, consulting and training experience. She has assisted numerous food manufacturers, from two-person family businesses to internationally recognised organisations, relating to various regulatory and customer specific standard requirements.

Stephanie is involved in animal welfare and also enjoys travelling in NZ and overseas.




Jo Hopkins

North Island Consultant and Trainer  

Jo originally trained as a Dietitian and started her professional life at Auckland Hospital in 1996. After returning from her overseas experience, she fell into food safety and found her niche. Jo has extensive experience in a number of food settings, including hospital food service, meat processing and a stint as an auditor. She joined NSF Burwater in 2006 as a consultant and trainer, assisting clients to develop robust food safety systems and compliant food labels. Jo is passionate in creating solutions that work for each client's unique situation.
Jo lives on a small lifestyle block in Coatesville with her British-turned-Kiwi husband Andy, their three kids, two cats, four chickens, three alpacas and numerous wild ducks. In her spare time, she loves cooking (especially with the produce from the veggie garden), good wine, and spending time with her family.

Michelle Field

Admin & Support

Michelle is the Administration Manager for NSF Burwater, and has been with the company since 2004. During that time, Michelle has seen the company go from strength to strength, and has enjoyed seeing a wide range of business get ahead in the food industry with the help of NSF Burwater. Her busy role consists of scheduling and administering our food safety training courses nationwide, handling enquiries and keeping the training team on track.

Donna Gower

Admin & Support

Donna provides support across the entire group and is quite often the friendly voice that will help you when you call. Donna has been trained for chaos, bringing the skills and patience of a mother of three to managing the day to day challenges here with ease.
When not working Donna plays tennis and netball when she is not running around after her busy family

David Sewell

Consultant and Trainer - Wellington

David has been in the food industry for over 15 years, is a qualified chef and NZQA assessor. David continued his studies with work placed training and had the opportunity to work with John Campbell at his two-star Michelin restaurant. After spending many years travelling and working in Europe and Canada he finally moved to New Zealand. David has extensive experience in training food safety and working with Food Control Plans. Before joining the team at NSF Burwater, David was managing the kitchen teams at Wellington Regional Hospital.

Away from work, David likes to spend his spare time, mountain biking, running and SUP boarding. David also enjoys food-based television programmes especially with Hugh Fearnley-Whittingstall, Jamie Oliver and Gordon Ramsay.
