Introduction to HACCP

We believe training should be simple, fun and memorable. That way, our trainees remember what they have learnt and can apply the knowledge into their workplace.

HACCP is a management system in which food safety is addressed through the analysis and control of biological, chemical, and physical hazards from raw material production, procurement and handling, to manufacturing, distribution and consumption of the finished product.

The purpose of this course is to introduce participants to the principles of HACCP (based on Codex guidelines) and what is required to implement an HACCP-based Food Control Plan.


 

Course Objectives

Topics Covered:

  • The importance of a risk-based food safety system based on HACCP
  • Review of Food Safety Hazards
  • Codex requirements and NZ Foods Legislation
  • The relationship between HACCP and risk-based food safety systems such as Food Control Plans, Food Safety Programmes, etc.
  • Pre-requisite programmes
  • Introduction to the 7 Principles and 14 Steps of HACCP
  • Implementation and Review of the HACCP Plan

Course Pre-requisite

 

While there is no pre-requisite for completing this course, it is recommended participants have
a basic knowledge of food safety and food safety hazards

 

Learning Outcomes


On completion of this course, the learner will be able to:
  • Understand the requirements of a risk-based food safety system e.g. Food Control Plan, Food Safety Programme
  •  Understand the 7 Principles and 14 Steps of HACCP and have a basic understanding of how to apply them
